Vegetarian Pah Mee (Lor Mee)
A simple and comforting vegetarian pah mee with a light savoury broth, paired with vegetarian chicken, tau pok, and vegetables.

Ingredients
Some Veg Chicken Cubes
- some Veg Chicken Cubes
- 3 ginger slice
- 2-3 shiitake mushroom
- Wongbok Cabbage
- Taupok
- Carrots
- Light Soy Sauce
- Water
- Salt and Pepper for taste
Instructions
- Heat a pan with a little oil and fry the sliced vegetarian chicken cubes until lightly browned and fragrant. Remove and set aside in a bowl.
- In the same pan, sauté sliced ginger and mushrooms until aromatic. Add a splash of light soy sauce to enhance fragrance.
- Add wongbok cabbage and carrots. Stir briefly, then pour in water to form the soup base.
- Add the cut long tau pok and let the soup come to a boil.
- Add pah mee and cook until noodles are tender.
- Return the vegetarian chicken cubes to the pot. Season with pepper and adjust taste with light soy sauce if needed.
- Turn off the heat and drizzle sesame oil for aroma.
- Garnish with parsley, sesame seeds, and cut chillies if desired. Serve hot.
