Stir Fried Spaghetti with Mushroom & Spinach
A quick and tasty stir-fried noodle dish with mushrooms and fresh greens, tossed in a light savory sauce.

Ingredients
- 200g noodles (linguine or wheat noodles)
- 6–8 button mushrooms, sliced
- 1 small bunch leafy greens (e.g. spinach or chye sim)
- 1 tbsp light soy sauce
- 1 tbsp vegetarian oyster sauce (or mushroom sauce)
- 1 tbsp cooking oil
- Salt & pepper, to taste
Instructions
- Boil noodles in a pot of water until al dente. Drain and set aside.
- Heat oil in a wok or large pan.
- Add sliced mushrooms and stir-fry until golden brown.
- Toss in leafy greens and stir-fry briefly until just wilted.
- Add cooked noodles to the wok, followed by soy sauce and vegetarian oyster sauce.
- Mix well until noodles, mushrooms, and greens are evenly coated with sauce.
- Plate and enjoy warm.
