Ingredients:
- 1 egg
- 100–150g tofu (soft or firm), crumbled
- 1/4 tsp turmeric powder
- 1 tsp tamari or light soy sauce (your choice)
- 1/2 tsp soybean oil (or sesame oil, optional)
- Pinch of pepper (white or black)
Optional add-ins:
- A few spinach leaves, shredded carrot, or a sprinkle of black sesame
Instructions:
- Crack the egg into a bowl. Add turmeric and tamari/light soy sauce. Beat lightly.
- Heat soybean oil in a non-stick pan over medium heat.
- Add crumbled tofu and stir gently to warm through.
- Pour in the egg mixture and scramble everything together.
- Cook for 2–3 minutes until egg is set and tofu is golden.
- Season with pepper and serve warm. Enjoy with toast, greens, or brown rice.
