Radish & Sweet Corn Soup

Ingredients
- 1 ear of corn, chopped into chunks
- 1 carrot, peeled and sliced
- ¼ white radish, peeled and sliced
- 10 goji berries
- 4 red dates (seed removed)
- Salt, to taste
- 1.5 litres of water
Instructions
- Prepare the ingredients: Peel the carrot and radish. Cut the corn into smaller sections.
- In a pot, bring the water to a boil. Add goji berries and red dates.
- Add corn, carrot, and radish to the pot.
- Simmer over medium heat for 30 minutes, until vegetables are tender and flavors have infused.
- Season with salt to taste.
- Serve warm.
